Study Group: Microbial diagnostics
Group Leader: Dr. Jelka Ondruschka
Without specific treatment, food and pharmaceutical products are exposed to contamination and spoilage. For food safety, contamination should be inactivated or removed. Conservation is normally realized by thermal processes. The problems are the instability of heat-sensitive ingredients (vitamins or pharmaceutically active agents) and the reduction of them during the process.
Together with partners from industry and research establishments, an innovative technology for the reduction of microbial count in liquid foods and pharmaceuticals is developed and will be realized. It will be an alternative to thermal process technologies with the advantage of conservation of naturally active substances with inactivation of microorganisms. The investigation to determine the presence / absence of microorganisms, the number of microbial counts in raw materials and products and the kind of microorganisms will be carried out. It is proposed to develop a microbial verification procedure which is rapid and safe.
